Mexia, Texas and German Apple Cake

I wandered a bit around Mexia – pronounced Mahaya – took me awhile to get that right!  After a doctor appoint and they had some cool buildings.  I really love the one they are using as a civic center.  Way back during the Mexia oil boom there lived over 30,000 people there and a lot of famous people came from all over, big oil companies to get into the boom.  You can see some residual of the boom, but it is just another small Texas town.

Mexia also had  WWII Prisoner of War Camp.  Believe it or not.

After visiting the Czech town of West, TX, I decided to make German Apple Cake since we are mostly German and English/Welsh/Irish.  This was simple and made melt in your mouth yummy gooey cake!
